Chewy Oatmeal Chocolate Chip Cookies

Oatmeal cookies are a type of drop cookie. The recipe usually includes a mix-in like raisins or chocolate chips. They became popular in the United States during the early 1900s as a “health food”, due to the increased fiber from the oatmeal. There is a famous legend of the origin of oatmeal cookies. They may have derived from British/Scottish oat cakes. During times of war, the soldiers would carry the oat cakes into battle and ate them to increase their energy.

I loved oatmeal cookies as a kid. My father would usually get me oatmeal raisin cookies as a treat. Eventually he discovered a restaurant that made oatmeal chocolate chip cookies, and when he got some for me I was hooked. I loved the combination of the oats with the chocolate chips. I wanted to recreate those delightful cookies in my own kitchen. I hope you enjoy this recipe!

Chewy Oatmeal Chocolate Chip Cookies Recipe

Yields 20 to 22 cookies

Prep Time 10 min

Bake Time 12 to 15 min

Inactive Time 10 min

Ingredients

8 tablespoons unsalted butter, softened

1/2 cup granulated sugar

1/4 cup light brown sugar, tightly packed

1 egg

1 teaspoon vanilla extract

3/4 cup all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup old fashioned oats

1/2 cup chocolate chips

Directions

Preheat oven to 350 F.

In a medium bowl beat together the butter, granulated sugar, and brown sugar until light and fluffy.

Add egg and vanilla to the mixture and incorporate.

Mix the flour, baking powder, salt into the batter.

Fold in oats and chocolate chips until just combined.

Prepare a cookie sheets with parchment paper.

Using a tablespoon or a small cookie scoop, drop mounds cookie dough onto the parchment paper.

Bake for 12 to 15 minutes until light browned.

Transfer the cookies to a cooling rack and cool for about 10 minutes.

Grab a glass of milk or plant based milk, dunk in the cookies, and enjoy!

Variation: Add 1/4 cup chopped peanuts to the batter.
