Vegetarian Thai Fried Rice

Fried rice always pleases a crowd, and it is super easy to make!

Fried Rice is a dish where cooked rice is stir-fried in a wok or frying pan. It is usually mixed with ingredients like eggs, vegetables, meat or seafood. It is a very popular part of the cuisine in East, South, and Southeast Asian countries. Fried rice was first developed in China during the Sui Dynasty. There are many variations on fried rice because it is a dish that is typically made with leftover ingredients.

The first time I made Thai Fried Rice for a crowd was a whirlwind. My husband and I were hosting a dinner party and we did not have enough cold rice for the amount of guests we were hosting. Thus I made a lot of fresh rice right away and put it in the freezer to cool it faster. When I put it in the wok to cook it took up a lot of the surface area and I had to be careful when tossing the rice. In the end everyone loved it and the dinner party was a huge success. Vegetarian Thai Fried Rice

Yields 4 main dish servings and 6 side dish servings

Prep Time 5 minutes

Cook Time 11 minutes

Wine Pairing Suggestion: Chardonnay

Beer Pairing Suggestion: Pale Ale

Ingredients

1/2 cup frozen vegetables (peas, corn, and carrots)

2 cups cold cooked white rice

1 tablespoon vegetarian fish sauce

2 tablespoons soy sauce

1/4 teaspoon sugar

Freshly cracked black pepper

1 egg, beaten

1 green onion, chopped

Vegetable oil

To Serve: Cucumber and tomato slices

Directions

Heat a tablespoon of vegetable oil in a wok or large pan on medium heat.

Toss in the frozen vegetables and cook for 2 minutes.

Add in the cold white rice. Mix together the vegetables and rice. Cook together for about 4 minutes.

Pour the vegetarian fish sauce and soy sauce over the rice. Sprinkle on the sugar and mix together. Add black pepper as desired. Cook for about 3 more minutes.

Make a well in the middle of the rice pile. Pour the beaten egg into the well. Let it cook for 1 minute.

Toss the egg throughout the fried rice. Add the green onion and cook the rice for about 1 minute.

Serve hot with cucumber and tomato slices.

If you want to make this not vegetarian, chicken, shrimp, and pork all go well in fried rice!
